Dinner Day 22: Steak and Chicken Kabobs on Spinach

These kabobs were fast, easy and awesome slow carb diet compatible dinner!  I purchased two packages of prepared kabobs that are available in the butcher section at Harris Teeter.  The chicken ones were pre-marinated with a soy sauce based marinade.  I basted the beef ones with a little olive oil.  It only took about 18 minutes to broil them in the oven.  I served them with spinach instead of the usual load of carb-infested jasmine rice.  The spinach soaked up the juices from the meat.  It was really tasty – and nice to have a little variety too.
