Dinner day 11: Salisbury steak, lima beans, spinach & avocado

As Chef from South Park would say, “Don’t worry, children.  It’s Salisbury steak day!”

Our grocer was out of cubed steak, so I asked the butcher to do a single grind pass on a London broil.  It wasn’t quite the right consistency – pretty sure he did a couple of passes.

I sort of adapted this recipe.  While sauteing one sliced onion,  I mixed a scrambled egg and pepper in to the meat and shaped it into patties. (No, the world will not end if you skip the bread crumbs.)   Then removed the onions to a bowl and browned the patties. When they were done, I put them into a large Pyrex dish and covered them with the sauteed onions and a small can of sliced mushrooms.

To the drippings left in the pan, I added about half a tablespoon of Wondra sauce flour.  Yes, this is naughty!  But it only adds 12 grams of carbs to the entire 8 serving recipe.

I deglazed with a little Worstershire sauce, stirred in Dijon mustard, and added some beef broth that I thawed and pre-warmed in the microwave.  Then poured the sauce over the patties in the Pyrex dish and popped it into a pre-heated 350 degree oven for about a half an hour.

Super yummy!  And the first time I finished dinner without being hungry in 11 days!
